This meal is not only easy to make, it is low in both calories
Makes 12 servings (1 1/3 cups each)
6 cups black-eyed peas, cooked (or 3 cans black-eyed peas, rinsed & drained)
2 cans (14 oz. each) reduced sodium, chicken broth
1 pkg. (14 oz.) Turkey Smoked Sausage, browned, thinly sliced
2 cups chopped onion
1 cup water
1 tsp. crushed red pepper
1/2 tsp. ground red pepper
2-1/2 cups Minute Brown Rice, uncooked
MIX cooked or canned peas, broth, sausage, onion and add 1 cup water and seasonings in medium saucepan; bring to boil.
STIR in rice; cover. Simmer 10 minutes or until rice is tender.
