PowerHouse Vegetable Medley

    Although higher in sodium, it's a vitamin packed side dish!

    ½ cup Reduced Fat Raspberry Vinaigrette Dressing, divided
    1 ½ cups thinly sliced carrots
    2 cups broccoli florets
    4 cups packed torn spinach
    ½ cup Reduced Fat Colby / Monterey Jack Cheese
    ¼ cup bacon pieces(optional)

    Bring ¼ cup of the dressing and carrots to boil in medium saucepan. Reduce heat to low cover and simmer 4 min.
    Stir in broccoli; cover and continue to simmer 4 minutes or until crisp tender.
    Toss remaining ingredients with hot vegetables in saucepan. To reduce sodium, omit bacon.
